MUMS MANGO

My mum is a great cook! and since I've moved away from home, I've been really missing her cooking. I thought I would try to re-create some of her recipes in my home and learn, but they never taste as good when you make them yourself. 

This Mango Salsa, however, is SUPER easy to make and most importantly super easy to get right. Its fresh, sweet and zingy and goes amazing with fish, Mexican food or even on its own!

 

Here is the recipe:

INGREDIENTS

 

  • 1ripe mango, diced

  • 1 Avacado sliced

  • 1 medium red sweet pepper, chopped

  • ½ cup chopped red onion

  • ¼ cup packed fresh coriander leaves, chopped

  • 1 large lime, juiced

  • Pink Himalayan salt to taste

  • Extra virgin olive oil

  • (Optional red chilli for a kick)

INSTRUCTIONS

  1. In a bowl, combine the prepared mango, red pepper, onion, coriander and avocado. Squeeze in the juice of one lime.

  2. Stir the ingredients together. Season to taste with salt, and stir again. For best flavour, let the salsa rest for 10 minutes or longer.
